BURLINGTON, Vermont—Hilton Burlington Lake Champlain, soon to be Hotel Champlain, Curio Collection by Hilton, has announced a culinary partnership with Heirloom Hospitality, helmed by Chef Eric Warnstedt. Together, the hospitality partners will introduce the seafood-focused spot, Original Skiff Fish + Oyster.
Construction of the restaurant will begin in November with an opening date slated for spring 2024. Hilton Burlington Lake Champlain is operated by Aimbridge Hospitality.
Heirloom Hospitality tapped Ethan Wood of Wood Mountain Fish for the restaurant, which will focus on a seasonal menu while connecting to local growers, ranchers, bakers, artisans, and wildcrafters.
“This is a fantastic opportunity to give locals and travelers something unexpected in Vermont,” said Steven McClure, general manager of Hilton Burlington Lake Champlain, soon to be Hotel Champlain. “Original Skiff is an inspired step towards the hotel’s overall transformation into Hotel Champlain to become a destination for fun and convivial culinary experiences.”

This partnership represents another step forward in Hilton Burlington Lake Champlain’, soon to be Hotel Champlain’s relaunch as it transitions into part of the Curio Collection by Hilton brand. Additional renovations currently underway include the front drive, porte-cochere, and guest entry. Recently completed renovations include a fitness center, guestrooms, multiple community areas, and meeting and events spaces. Hilton Burlington Lake Champlain will remain open during the renovations and officially debut as Hotel Champlain in spring 2024.
