Sage Hospitality Adds Mercantile Dining & Provision to Portfolio

DENVER, Colorado—Sage Hospitality Group welcomed Mercantile Dining & Provision to its portfolio, joining the roster of more than 50 restaurants, bars, and entertainment venues under Sage Restaurant Concepts (SRC). Mercantile will be an owned restaurant concept for Sage, alongside brands such as Urban Farmer and Departure, with plans to grow the brand in suitable standalone restaurant locations. Additionally, Chef Alex Seidel will be joining SRC as a collaborator, leveraging his experience to build and support new restaurant concepts beyond Mercantile.  

Mercantile opened in 2014, and as the restaurant heads into its 10th year, SRC will oversee a renovation with plans to unveil a refreshed space in spring 2025.  Located near sister Sage restaurants and cocktail bars including Urban Farmer, Call Me Pearl, Kachina Cantina, and The Original, Mercantile has been popular with guests of The Crawford Hotel, also located within Union Station.

We are very excited to work closely with him to thoughtfully re-launch the Denver Union Station location, grow the Mercantile brand, and develop new concepts together.” 

Seidel and his team, currently led by Executive Chef Alex Grenier, have established the restaurant as it’s known for its focus on comfort food with a modern spin. A space with wood tables, high ceilings, banquettes, and natural lighting, Mercantile is a destination for lunch and dinner.  With room for 108 guests across the dining room, chef’s counter bar, and marketplace, the restaurant is also home to a semi-private wine room that can host events and celebrations. Mercantile is also home to an outdoor area with a capacity for 75 guests.  

The team at Sage Restaurant Concepts will be overseeing operations and management of the space. Led by COO Justin Fowler, the SRC team will work with Chef Seidel to ensure a positive operational experience.
