NEW YORK—Situated on the southeast corner of 42nd Street, overlooking Times Square between Broadway and Bryant Park, The Knickerbocker Hotel has announced the launch of three new dining venues in partnership with Chef Charlie Palmer. On March 12, 2015, the New York property welcomed Charlie Palmer at The Knick — The Knickerbocker’s signature full-service restaurant and bar, and JAKE’s @ The Knick — the hotel’s ground-level espresso bar. St. Cloud — the Hotel’s 7,500-square-foot rooftop bar and terrace, is set to open spring 2015.
“Developing the three restaurants, and the many integrated food and beverage components at The Knickerbocker, has been a true passion project for me for the last several years,” says Palmer. “The landmark hotel, Times Square location, and historic significance have been inspiring for me as our team has worked for the past 16 months to create unique eating and drinking experiences throughout the property. Each — Charlie Palmer at The Knick, JAKE’s @ The Knick, St. Cloud, and of course, Aureole — have been strategically designed to cater to the myriad of guests that will enter through the Hotel’s front doors.”
Located on the fourth floor of The Knickerbocker, Charlie Palmer at The Knick offers a 100-seat design as well as a bar and lounge with seating for over 40 guests. Designed by the Hotel’s New York City-based design firm, Gabellini Sheppard, the restaurant features touches and textures like chainmail drapes, a Carrara marble bar top and finishes, and an open action kitchen. With menus designed to provide a vast array of options for discerning New York palates, Charlie Palmer at The Knick serves breakfast and lunch in the dining room and dinner served in the adjacent bar room, with menus inspired by Palmer’s cooking style.
Operating as the second portal entry to the hotel, JAKE’s @ The Knick honors John Jacob ‘Jakey’ Astor VI, the son of John Jacob Astor IV, who originally opened The Knickerbocker in 1906. Guests are welcomed through a barrel vaulted ceiling. JAKE’s @ The Knick offers an all-day menu, featuring coffee and espresso provided by Brooklyn Roasting Company and artisanal flatbreads from Sullivan Street Bakery.
Opening spring 2015, St. Cloud will be the pinnacle of The Knickerbocker experience. Paying homage to the hotel’s first incarnation, St. Cloud will feature a seasonal menu with small plates paired with a cocktail program. The bar will be complete with a signature cigar lounge from tobacconist Nat Sherman, and the Waterford Crystal Lounge — a space featuring custom furniture from British designer Jo Sampson, as well as Waterford bar and stemware.
