SEATTLE, Wash.—Thompson Hotels has announced a culinary partnership between Thompson Seattle—set to open its doors in summer 2016 as the brand’s first Pacific Northwest property—and locally-loved and nationally-acclaimed Huxley Wallace Collective restaurant group. Award-winning Executive Chef Josh Henderson, whose restaurant endeavors have been featured in The New York Times, Food & Wine, Bon Appetit, and SAVEUR, will oversee the culinary direction of Thompson Seattle. Scout, the hotel’s signature restaurant, and The Nest, its scenic rooftop bar and lounge, will be dynamic dining destinations for locals and guests alike. Henderson and his team will also design an interactive in-room dining experience and a food and beverage program tailored for groups and weddings.

Scout at Thompson Seattle will embody the backbone, beauty, and spirit of the area with a whimsical, yet smart design. The restaurant will be anchored by an oversized chef’s table serving multi-course, highly local food that is indigenous to the region. Scout will also feature a modern, glass-encased private dining room, The Cabin, which will comfortably seat groups up to 20. An outdoor courtyard and sidewalk access highlight the hotel and restaurant’s stellar location overlooking Pike Place Market and central downtown.

Thompson Seattle will also be home to a sleek indoor-outdoor rooftop bar and lounge, The Nest, operated by Henderson and his team. The space will offer sweeping city views of nearby Pike’s Place Market, Puget Sound and Olympic Mountain Range. Both Scout and The Nest will highlight the hotel’s versatile tableside service capabilities, creating a more intimate connection between guests and the kitchen. The Nest will serve small shareable plates and cocktails designed to foster social interaction in a communal setting.
Scout and The Nest will be situated inside Thompson Seattle, located at 110 Stewart Street at the corner of the city’s bustling 1st Avenue and Stewart Streets, directly adjacent to all Pike Place Market entrances.
