Four Seasons Hotel Seattle and Ethan Stowell, local chef and restaurateur, have joined forces to create a new restaurant concept to replace ART Restaurant & Lounge. A soft opening date for the new restaurant is scheduled for late spring. EDG Interior Architecture & Design will lead the redesign of the lounge and restaurant.
“Ethan’s restaurants define what Pacific Northwest food is all about—simple, fresh, creative, and passionate,” said Ilse Harley, general manager of Four Seasons Hotel Seattle. “This new venture with Four Seasons will combine his food and style with our extraordinary service and inspiring locale. Ethan will oversee the entire menu and help to create the atmosphere of the new restaurant.”
Stowell, whose restaurants include Staple & Fancy, Anchovies & Olives, How to Cook a Wolf, and many more, was named one of Food & Wine‘s Best New Chefs in America in 2008 and was nominated several times as “Best Chef Northwest” by the James Beard Foundation.
“I am excited to be coming back downtown, where we originally started,” Stowell said. “We have been looking for the perfect opportunity, and I couldn’t imagine a better place and partner to take local dining to the next level.”

Ethan’s commitment to serving delicious food with the best ingredients will provide an exceptional Northwest dining experience.”
