The range of amenities and services at a hotel or resort can keep guests spending money on the property instead of down the road. With the right mix of spa and F&B offerings, a hotel or resort can capture much more than just the room night. As part of the Sanderling’s multimillion dollar renovation, the owners upgraded the spa and two of the restaurants, and they added three new bar concepts. In the process, the owners tripled the seating capacity of one restaurant and completely repositioned the other, giving it a fresh look with an open kitchen and raw bar. “With a full-service destination resort like this, guests should count on their rooms being great, so the true differentiation comes from our F&B program and the caliber of service we can offer,” says GM Dick McAuliffe. “We now have three restaurants and four bars on property, so guests don’t have to leave.” But if they still have an itch to get away, the resort also added kayak, surfboard, paddleboard, skimboard, and bicycle rentals.
